BBQ beetroot and goats cheese salad
Coming back from Copenhagen I’ve been inspired by their use of fresh root vegetables so decided to put my #seasonsupply beetroot to good use in a simple salad.
Cooking instructions
* Step 1
Slice the beetroot and mix with a tbsp of balsamic vinegar, mixed herbs, salt and pepper
* Step 3
Slice the rest of the ingredients
* Step 4
Toss the salad with oil and vinegar and top with goats cheese
