Healthy Chicken and Spinach Salad
Something light, easy and more importantly healthy! This is great for anyone wanting to cut down on unhealthy foods and get fit. Perfect for a light delicious lunch that is also filling! This recipe also serves as great meal prep for the rest of the week’s lunch👌🏽

Cooking instructions
* Step 1
Chop the chicken breasts into strips and place in a roasting dish with olive oil and spices in a preheated oven at 180 degrees C for 15 minutes
* Step 2
Take the chicken out and set aside to cool. Using only a few strips for this recipe and setting aside the rest for the next two days’ lunch.
* Step 3
To assemble, place the cleaned spinach leaves on a plate, then the cucumber, feta, avocado and chicken strips.
* Step 4
Serve with a drizzle of lemon juice and olive oil. Enjoy!
