Toasted Almond and Marzipan Blondies ❤️

This recipe is adapted from one of my favourite food sites, Food52. And the original can be found there. Inspired by this recipe and a recipe author’s recipe for Marzipan, I decided to make this. Nothing says Christmas better than Marzipan! I love the taste and texture of Marzipan, it lends an extra chewy texture to this blondie (the equivalent to a brownie) The white chocolate makes it irresistible and Moreish. The toasted almonds are the perfect addition! You’ll finish these before you can read the title of this recipe! 🤪

Ingredient

30 - 45 minutes
1 1/2 cups

all-purpose flour

1 teaspoon

baking powder

Cooking instructions

* Step 1

Preheat oven to 180 degrees C. Grease and line a baking tray with parchment.

* Step 2

Place the butter and half of the white chocolate in a heat proof bowl and heat in the microwave until melted. Stir to combine. Set aside to cool slightly. Whilst still warm, add both sugars then whisk until combined.

* Step 3

Add the eggs(one at a time) whisking after each egg is incorporated. Stir in the vanilla.

* Step 4

Add the flour, baking powder, and salt. Mix until the batter just comes together (be careful not too overmix) be gentle with the batter.

* Step 5

Fold in the chopped marzipan, almonds remaining white chocolate. Bake for 25 - 30 minutes, until golden and slightly soft in the middle. If you’re using a larger baking tray start checking your blondies at 25 minutes.

* Step 6

Set aside to cool, slice into bars and serve with vanilla ice cream and seasonal fruit 🍓🍒 Enjoy! 👌🏽
