Smoked salted caramels
This year instead of buying gifts I’m making them from scratch! These lovely caramel candies are the perfect gift for the sweet tooth. If you’ve left Christmas 🎄 shopping till the last minute (avoid the shops) why not making these for your loved ones to make the feel extra special by giving them something you’ve made straight from the heart ❤️ This recipe is adapted from the festive issue of delicious UK food magazine.

Cooking instructions
* Step 1
Line the baking tray with baking paper.
* Step 2
Using a sugar/candy thermometer. Add this in before putting the pan with ingredients on the heat.
* Step 3
Place all of the ingredients plus half of the salt(saving the other half to use at the end) into a large pan set on a low heat and leave to cook. Stir until the sugar has dissolved and butter has melted
* Step 4
Increase the heat to medium-high the allow the mixture to boil without stirring(very important, else the sugar will crystallize) as the caramel cooks use a basting brush dipped into water and brush down the sides of the pan to prevent any crystals forming.
* Step 5
As soon as the caramel reaches 121 degrees C on the thermometer, take the pan immediately off the heat and carefully pour the very hot caramel into the prepared baking tin. (Please be very careful sugar/caramel can reach a very high melting point, it is important to be very cautious and careful when handling hot sugar/caramel.
* Step 6
Prick out any air bubbles in the liquid mixture with the top of a sharp knife or toothpick. Sprinkle over the remaining smoked sea salt flakes and if you like some edible gold stars to make it extra special :) allow the mixture to cool completely at room temperature in a dry, cool place. Then place in the fridge to fully set overnight.
* Step 7
Ensuring room temperature is not too hot, take the caramels out and slice them into squares, or whichever shape your prefer. Using baking paper/parchment that has been cut up into small rectangular sizes to fit the candies, wrap each caramel by folding the paper over then twisting the ends in opposite directions. Keep chilled to avoid melting in this heat. Enjoy the look of gratitude from your family and friends as they open these delicious candies! 😍

Store them in a jar and place a lovely Christmas tag/ card with your loved ones name and a little message for them.
