Zucchini balls by Christina

Summer zucchini balls without frying... Down with the fats!

Ingredient

Food ration :

30-50 zucchini
1 kg

Cooking instructions

* Step 1

Grate the zucchini or blend them in a food processor (it's easier). Set them aside to strain for at least 1 hour.

* Step 2

Blend the peppers, the onion and all the herbs in the food processor and add them to the zucchini. Add the cheese.

* Step 3

Knead and add the eggs. Add the breadcumbs gradually until you have a pliable mixture.

* Step 4

Set it aside in the fridge to set.

* Step 5

Then add 1-2 tbsp olive oil and knead a little more.

* Step 6

Form your zucchini balls and coat them in breadcrumbs.

* Step 7

Spread them on greaseproof paper and bake using the fan at 180°C for 20-30 minutes. Bon appétit!
