Fanouropita by Mrs Kiki

All the fanouropitas (Greek spiced raisin cake, in honour of St. Fanourios, patron saint of lost things) have the same ingredients more or less. I got the recipe for this particular one from an old lady, a neighbour of mine, Mrs Kiki and I can say it is one of the most tasty and fluffy ones that I have tasted.

Ingredient

1 cup

oil

1 1/2 cup

sugar

1 1/2 tsp

baking powder

Cooking instructions

* Step 1

Place the flour in a large bowl and add the baking powder and the cinnamon.

* Step 2

Then add the oil, the orange zest, the ground walnuts and the sugar.

* Step 3

Wash your hands thoroughly and add the natural orange juice mixing by hand (so that you ge the feeling of how thick the batter is) until you have a thick mixture. The less thick the mixture is the more fluffy the cake will be. But make sure it is not too runny!

* Step 4

Continue by adding the raisins after you coat them in flour and mix.

* Step 5

Finally, place the cake in a round mold of 26 to 28 diameter (oiled and floured) and bake in a preheated oven at 180°C for 1 hour (keep checking on it because the time of baking varies from one oven to another).
