Monastic fanouropita
This is a monastic fanouropita (Greek spiced raisin cake, in honour of St. Fanourios, patron saint of lost things. Greek housewives make this cake mainly on the day he is celebrated or when they want the saint to intercede to help them find something that is lost). I have found it in the St. Nektarios site, it is very simple to make and extremely tasty. The raisins and walnuts are what makes a difference! It is worth giving it a try...
Cooking instructions
* Step 1
Beat all the ingredients in a stand mixer for a few minutes, then add the flour with the baking soda and mix well.
* Step 2
Follow by adding the cup with the golden raisins and the walnuts chopped coarsely.
* Step 3
Place in a buttered baking tray of 30 cm and bake at 180°C for 45 minutes until you poke it with a knife and it comes out clean.
* Step 4
After it is done let it cool and then sprinkle with icing sugar.
