The amazing kataifi bites of Mrs Voula

Small, beautiful kataifi bites with a whole almond that are not smothered in syrup. A fine whole-pan sweet like those from a pastry shop. It is a bit difficult to set it until one gets used to rolling the mini kataifis but it really is a simple sweet. Mrs Voula comes from Imbros, has lived in Poli (Istanbul) and later in Athens. She is an amazing cook and has a large repertoire of recipes... She makes recipes from Poli (Istanbul), traditional recipes from islands, excellent pies and also follows "modern" cooking!  In a few words, she is very skilfull and always willing to show tips in cooking and tradition to the young! The dessert that I post is one of the best that she makes according to my opinion. She also offers it at weddings, christenings and other festive events and all her friends and aquaintances order it!! I think that recipes that are this good, should be shared.

Cooking instructions

* Step 1

Making the kataifisWrap a thin strip of shredded dough (thinner than your pinky and about 25 cm long) around your index finger. Removing it from your finger place the end of the "nest" at the bottom and the almond on top (narrow part in the "nest"). To better understand how to make them watch the video of Mrs Voula. While you make them, cover the rest of the dough with a towel so that it doesn't dry.

Place them one next to the other in a well buttered baking tray that accommodates them without leaving any empty space. Then, place a small piece of butter on each bite until you run out of butter (you can also melt the butter and pour it on top of all of them, distributing it evenly).

Bake at 170-180°C (in a preheated oven). The dough should get golden brown as well as the almond. You should know that after you pour the syrup over them their color will darken. While they bake, prepare the syrup so that it is ready when you take them out of the oven.

Boil the sugar and water with a little lemon juice counting 8 minutes from the moment they start boiling. When you take the tray out of the oven pour the boiling hot syrup over them. You might think that the syrup is too much but they absorb it. Hold on and don't move them before they cool completely! Good luck!
