Red eggs

This is not a recipe for dyed red eggs but for eggs poached in fresh grated tomato. A delicious and healty variation of fried eggs, since you cook the eggs in the tomato sauce and not in oil. These are served as a main dish. They are served with fresh hot country bread and cheese.

Ingredient

Food ration :

2 servings
3-4 tbsp

oil

1-1 1/2 cups

water

Cooking instructions

* Step 1

Heat a large empty frying pan over a strong heat.

* Step 2

Add the grated tomato and stir with a wooden spoon until most of the liquids are absorbed..

* Step 3

Add the water, salt, pepper and sugar (if you like) and let it cook over medium heat for about 10 minutes, stirring from time to time.

* Step 4

Before the sauce thickens (take care that it doesn't dry up, but most of the liquids are absorbed) add the oil and crack the eggs into the sauce, carefully.

* Step 5

Spoon some sauce on the eggs so that they cook better.

* Step 6

Serve the red eggs with their sauce and enjoy.
