Cod with mountain wild greens

Cod with mountain wild greens

This is a traditional recipe from Arcadia the way my mother used to make it.

Cooking instructions

* Step 1

Place the cod, cut in pieces, in a bowl with water (change the water at least twice) and desalt it.

* Step 2

On the next day, clean the pieces of cod and drain them of the water.

* Step 3

Prepare and wash the wild greens.

* Step 4

Boil for 10 minutes and strain them.

* Step 5

Sauté the onion and garlic in the oil until golden, but not brown.

* Step 6

Add 2 glasses of water (pour carefully, depending on the quantity of the wild greens and how moist they are, you don't want the food to be too watery), the tomato, the boukovo (always optional) and let everything boil for a couple of minutes.

* Step 7

Add the wild greens and boil unti they are almost done.

* Step 8

Place the pieces of cod on top of the wild greens and leave everything to boil together for an additional quarter of an hour, until the fish is cooked (check).

* Step 9

It is served hot, with a little bit of lemon juice, depending on taste.
