Greek island chickpea fritters (Revithokeftedes)
Delicious crunchy chickpea fritters that look like small doughnuts and are made with raw ground chickpeas. It is a sought after appetizer that is all the rage in the taverns of my island during summer. Whoever tries it will be wanting seconds.
Cooking instructions
* Step 1
Soak the chickpeas in plenty of water from the previous evening.
* Step 2
Strain them and put them in the blender with the onions, the tomatoes (which you have already peeled), the spearmint, the salt and pepper
* Step 4
If the mixture is thick and does not blend well, add a small tomato or a bit of water.
* Step 5
Empty the mixture into a bowl and add the flour and the baking powder (put as much flour as needed in order to get a mixture that is neither too thick nor too runny) and stir.
* Step 6
Let it sit for about an hour
* Step 7
Then fry them. Using a teaspoon, take spoonfuls of the batter and drop into plenty of hot olive oil (in a pot or a fryer) so that they are covered in it, till they are golden.
