Blue cheese Tater soup

A happy accident. My potato soup tasted a bit bland, so I added chunks of blue cheese. And it was a happy surprise.

Cooking instructions

* Step 1

Boil cubed potatoes in broth till tender with onion garlic and celery

* Step 2

Make a roux when potatoes are done.use stick of butter and 1/4 cup flour (adjust as needed) when it just starts to get a tiny bit of color....add cheeses and slowly add cream whisking the entire time. Until cheeses are totally melted.

* Step 3

Slowly stir into broth potato mixture

* Step 4

Simmer 5 min

* Step 5

Serve
