Carrot-Cucumber Rounds

Cooking instructions

* Step 1

Wash vegetables; peel carrots; Cut a thin slice off both ends of carrots and cucumber.

* Step 2

Cut cucumber in half lengthwise.

* Step 3

Using a corer, remove centre of cucumber. Insert carrot through centre, so it fits snugly; slice into 1/4-inch rounds.

* Step 4

Repeat with remaining carrot and cucumber.

* Step 5

Serve with your favorite dip.

* Step 6

YIELD: Approximately 24 slices.

* Step 7

COOK'S TIP: Using the above method, core out the centre of a zucchini and slice into 1/2-inch rounds. Insert strips of carrot, red pepper and/or parsnip. Steam or cook in microwave; season as desired.
