Easy Potato Rolls

Cooking instructions

* Step 1

In a large mixing bowl, cream sugar and shortening.

* Step 2

Add potatoes salt and eggs.

* Step 3

In a small bowl, dissolve yeas in 2/3 cup of warm water; add to creamed mixture.

* Step 4

Beat in 2 cups flour and remaining water.

* Step 5

Add enough remaining flour to form a soft dough.

* Step 6

Shape into a ball; do not knead.

* Step 7

Place in a greased bowl, turning once to grease top.

* Step 8

Cover and let rise in a warm place until doubled, about 1 hour.

* Step 9

Punch dough down; divide into thirds.

* Step 10

Shape each portion into 15 balls and arrange in 3 greased 9-in. round baking pans.

* Step 11

Cover and let rise until doubled, about 30 minutes.

* Step 12

Bake at 375°F for 20-25 minutes.

* Step 13

Remove from pans to cool on wire racks.

* Step 14

YIELD: 45 rolls
