Roasted beetroot with onion, garlic, oregano and parsley

Roasted beetroot with onion, garlic, oregano and parsley

An easy to prepare side dish.Or crumble in some feta cheese for a warm salad. Leftovers (if there are any) are great cold. Made with beetroot and onions from #seasonsupply

Cooking instructions

* Step 1

Heat oven to 180 degrees C.

* Step 2

Peel and chop beetroot into bite-sized chunks. Add to an oven tray.

* Step 3

Quarter onions and sprinkle amongst the beetroot

* Step 4

Add chopped garlic and oregano leaves

Add olive oil and gently mix

* Step 6

Bake in the oven for 30-40 minutes

* Step 7

Garnish and serve
