Christmas Muffins

Cooking instructions
* Step 1
Preheat the oven to 180 oC
Line a muffin tin with 8 paper cases
* Step 2
Beat together the caster sugar and dairy free spread until light and fluffy
Whisk in the eggs one at a time
* Step 3
Stir in the gluten free self raising flour and Christmas mincemeat
Divide between the 8 muffin cases
* Step 4
Top a sprinkle of brown sugar, flaked almonds and ground cinnamon
Bake in the oven for 20 minutes
* Step 5
Allow to cool and serve dusted with icing sugar
