Party size frittata bites

Cooking instructions
* Step 1
Whisk all your eggs thoroughly.
* Step 2
In a pan fry your red onion until soft but not caramelised.
* Step 3
In a large greased rectangular or square brownie type oven proof dish pour in the eggs and sprinkle with the onions and other ingredients. Add all the cheese except Parmesan.
* Step 4
Pop into a preheated oven (180) for about 30 mins. Then remove and sprinkle with Parmesan and return for another 20.
* Step 5
Remove from oven and allow to cool slightly for 10 mins before turning out and slicing into big bite size pieces. Serve with a tomato salsa and sprinkle with fresh basil.
