Roasted Spiced Pumpkin

I am taking part in Cookpad UK new challenge #roastessentials . This gorgeously delicious autumnal roasted spices pumpkin is so easy to make but so delicious to enjoy for the whole family.

Cooking instructions

* Step 1

Cut up pumpkin and scoop the seeds and bits in the middle, clean it and leave the skin on. Cut the into big wedges. Lay them out on a tray with oil spray kitchen foil or silicone baking sheet.

* Step 2

Sprinkle all the spice mix on top of pumpkin, mix them well and all the spices coated on the pumpkin. Bake for about 15-20 mins on 180c.

* Step 3

Then add kale in and mix well. Put back in for another 2-3 min. Garnish with pomegranate and nuts before serve.
