Vegan seared scallops with miso glazed 🌱

Vegan seared scallops with miso glazed served with edamame beans 🌱. I absolutely love love these funguy #fungus πŸ˜† king oyster mushroom or #eryngii as they are so meaty and got a really good texture perfect for meat substitute.

Cooking instructions

* Step 1

Using a sharp knife, score the top of each scallop (mushroom) with 6 - 8 lines to create a diamond pattern.

On a high heat pan, add butter then add scallop one by one anti-clockwise (like a pro chef πŸ‘©πŸ»β€πŸ³!)

Turn them over one by one after they turn lovely and golden

Mix miso paste with a little of water then use a pasty brush brush on top of the scallops.

Squeezed some lemon juice on top, add some edamame, quick toss.

Garnish with spring onions and Japanese chilli flakes before serve. Enjoy.
