Grass-fed sirloin steak with roasted cauliflower
In line with RAD and AI principles I almost never eat meat these days, but this was a special occasion and I'm lucky to have a butcher in my area that stocks grass-fed produce. It's expensive, I totally get that, but grass-fed is really the only inflam-friendly option if you want to continue eating red meat. It's far higher in omega3, is organic by default and much lower in saturated fat. However the real star of this once-in-a-blue-moon treat was the roasted cauliflower... absolutely delicious; who even needs potatoes anyway??!! 🙂

Cooking instructions
* Step 1
Break cauli into rough florets
* Step 3
Scatter cumin/chilli/garlic and season it
* Step 4
Leave to soak up the lovely spices for 10 mins while you heat oven to around 220...hot!
* Step 5
Into oven to roast for around 20-25 mins, turning pieces half way through
* Step 6
Meanwhile prep and cook your steak; rub sparingly with olive oil, season and sear in a hot pan before popping into oven until cooked the way you like... that's medium for me so 4-5 mins max
* Step 7
Remove steak, dot on a small knob of butter (optional), cover loosely with foil and rest until the cauli is done
* Step 8
Plate up! I had mine with home-made mayo but that's another story. The cauliflower was amazing, it caramelized and was spicy, warm and almost sweet. Enough for leftovers. A winner!!
