Sweet potato and red chilli soup ๐Ÿ ๐ŸŒถ

A really simple soup. You can swap the leeks for brown onions.

Cooking instructions

* Step 1

Chop the vegetables. Deseed and chop the chilli peppers.

* Step 2

Sweat the leeks and garlic for 5 minutes. Add the remaining vegetables and sautรฉ for 5 minutes

* Step 3

Add the vegetable stock and simmer for 15 minutes until the vegetables are tender

* Step 4

Use a hand blender to create the soup.

Add salt and pepper to taste. Serve with brown bread.
