Preserved lemons
These can be difficult to source ready made but are easy to make at home. They keep in the fridge for ages.
Cooking instructions
* Step 1
Slice lemons into quarters keeping them attached at the base.
* Step 2
Sterilise a large kilner jar.
* Step 3
Pack a layer of lemons into the jar and completely cover with salt. Continue to layer lemons and salt until the jar is full. Press down firmly and top with salt. Store in a cool place. Ready to use in a couple of weeks. Once open store in the fridge.
