Ratatouille

Can be eaten as a main with rice or pasta or as a side with lamb and potatoes.

Ingredient

2 cloves

garlic

2 tablespoons

olive oil

2 teaspoons

picked thyme

Cooking instructions

* Step 1

Chop all the vegetables into medium dice

* Step 2

Heat up the olive oil in a cast iron pot and add the garlic and onions and fry gently for a couple of minutes

* Step 3

Add courgettes, peppers, and aubergine and coat well with oil and fry gently

* Step 4

Add tomatoes

* Step 5

Add thyme and salt and pepper

* Step 6

Simmer gently either on the cooker top or in the oven for about 30 minutes or until all the vegetables are cooked
