Vegetarian pasta

Made largely with store cupboard ingredients this is a tasty and filling family meal.

Ingredient

Food ration :

Cooking time :

15 minutes
1 tin

tomatoes

2 cloves

garlic

2 tbs

olive oil

2 tbs

capers

Cooking instructions

* Step 1

Cook pasta according to directions in plenty of salted water

* Step 2

Chop courgettes into smallish dice

* Step 3

Fry courgettes in olive oil with garlic for 5 for 10 minutes until soft

* Step 4

Add tomatoes, capers, olives and artichokes and heat through

* Step 5

Drain pasta and add to sauce

* Step 6

Finish with parlsey and grated parmesan

* Step 7

Serve with a mixed salad
