Whole wheat couscous salad with roasted peppers and feta cheese

Cooking instructions
* Step 1
Boil the water in a small pot.
Add couscous, mix well and cover. Turn off the heat. Let it cool off.
* Step 2
Burn the peppers skin on top the stove. Put them in a plastic bag and let then sweat for a few minutes. Peel them, remove the seeds and dice.
* Step 3
In a small bowl make a dressing by mixing the olive oil, vinegar, lemon juice, parsley, cilantro, and black pepper, and salt.
* Step 4
In another bowl mix cold couscous, sweet onions, roasted peppers, chickpeas, cucumbers, feta cheese and dressing. Place the couscous in a platter and arrange kalamata olives on top.
