Potato Salad the Red One
A delicious warm potato salad, makes a great side. This is the first Easter celebration without my Mom she loved to try out new breads and different potato salads. This is for you Mom....

Cooking instructions
* Step 1
Chop your green onions and set aside. Wash and chop the potatoes. Add the potatoes to a pot. I cut the potatoes according to size the bigger one I sliced into 6ths the medium sized quartered. The smallest I chopped in half.
* Step 2
Add salt to potatoes and just cover with water. Boil till fork tender.
* Step 3
Melt your butter. Drain the sun dried tomatoes liquids into the butter. Take the sun dried tomatoes out of jar and chop them up. Add the chopped onion to the butter mixture. Sauté 5 minutes.
* Step 4
Add the sun dried tomatoes to the butter mixture then stir in the potatoes and olives. Add the sun dried tomato paste with herbs in it.
* Step 5
Wash and chop your parsley. Gently stir the parsley, and dill weed, into the potatoes. Taste and adjust seasoning. Allow to rest 20 minutes.
* Step 6
