Chicken fajitas and tomatillos

Cooking instructions

* Step 1

In a small bowl, whisk together 3 Tbsp oil with the garlic, salt, chile powder, cumin, paprika, sugar and lime juice. Set aside.

* Step 2

Heat a large skillet over medium-high heat. Add tomatillos to dry pan and cook for 3 to 5 minutes on each side or until lightly charred all over. Remove from pan and set aside.

* Step 3

In the same pan, add the oil and stir in the chicken. Cook for 2 minutes so lightly browned. Stir in the onion and bell pepper and cook for 3-5 minutes, until tender.

* Step 4

Stir in the spice mixture and cook another 2 minutes. Fold in the tomatillos. Season with salt and pepper. Serve with tortillas and any toppings you want to add.
