(طحين) Tahini
I've seen premade tahini in stores and it's always ridiculously expensive, which is really curious since it is actually so easy to make. I use this generally as a base for things like hummus and moutabal.

Cooking instructions
* Step 1
In a dry skillet, toast the sesame seeds until light brown and fragrant, about 5 to 10 minutes. Let cool down slightly before proceeding.
* Step 2
In a food processor, grind the sesame seeds for about a minute until it has the consistency of a crumbly paste.
* Step 3
Mix in olive oil, and then process again for another minute or so until the tahini has a smooth consistency. Store in a jar refrigerated for up to a month.
