I'd been reading Derek Lowe's In The Pipeline blog and it seems he occasionally posts recipes in addition to his many excellent articles on chemistry and medicine, and found this Iranian rice dish. As someone who learned to cook rice the East Asian way this business of straining the rice in a colander after boiling it makes me cringe... No wonder Uncle Roger recoils in horror! The crust of toasted rice (tahdig) is supposed to be a particular delicacy but I wound up burning it a bit but ah well. 🍚🐮🇮🇷

raisins

1/4 kg

ground beef

1/4 tsp

cinnamon

1/4 tsp

turmeric

Cooking instructions

* Step 1

Rinse the basmati rice three times in cold water. Add 3-4 cups water and 2 tbsp salt and let soak for about two hours.

In a pot bring two cups of water to a boil. Add ¼ tsp salt, and lentils. Reduce heat to low and simmer for 10 to 15 minutes or until lentils are slightly softened. Drain and set aside.

In a pan fry the onion until transparent. Add beef and raisins and season with turmeric and cinnamon. Stir fry until well browned, about five minutes.

After the soaking period, bring the rice to a boil on high heat, being very careful not to let it boil over. Let the rice boil for 5 to 10 minutes until somewhat firm, and then drain in a colander (aiya!).

In the same pot melt the butter. Add a layer of rice at the bottom, and then a layer of lentils and some cumin seed. Cover with more rice and lentils until you run out. Bring heat to high until the rice at the bottom starts to toast and then lower heat to medium low and cover. Steam for 30 minutes.

Serve topped with ground beef mixture.
