Irish Beef Stew
It's still fairly cool and the sort of weather for stews and soups, so I try to make an Irish-style stew. I used Guinness but I suppose any dark beer will do just as well. 🇮🇪☘️🐄🥩🥔🍲🍺

Cooking instructions
* Step 1
On high heat bring ½ cup water to a boil with the bacon. When the water is about to boil away, about 5 minutes, reduce the heat to medium and add the onions. Fry until translucent, about 3 minutes.
* Step 2
Add the beef, fry until browned, about 3 minutes.
* Step 3
Add the beer, and scrape off the bits that have stuck to the pot. Season with salt, pepper, and thyme. Add the bay leaf.
* Step 4
Add beef broth and bring to a boil. Reduce heat to low and simmer until beef is tender, about 2 hours. Stir occasionally and skim off the fat and scum.
* Step 5
After about an hour and a half add the potatoes and continue to simmer for another 30 minutes.
* Step 6
Mix ¼ cup water and 2 tbsp corn starch. Add to stew and bring to a boil on medium high heat. Reduce heat to medium low and simmer until stew thickens, about five minutes.
