Eggs Atlantic
This is a simple variation on eggs Benedict that substitutes smoked salmon for the Canadian bacon. The most tedious part of making this family of dishes is the hollandaise, but I managed to score a ready-made hollandaise that is good enough. I've also described below my method for poaching eggs in the microwave. 🇺🇲🗽🍳🐟🌅 #breakfast

Cooking instructions
* Step 1
Cut the English muffin and top with butter and smoked salmon. Toast in an oven for a few minutes until warm.
* Step 2
Crack an egg into a bowl of water. Place in the microwave and cover with a small plate. Microwave on high for 15 seconds, tap with a knife or spoon to disperse any bubbles (that might cause an explosion) and check. Repeat until the egg is poached to the desired level of doneness (usually 2 or 3 times with an 800 W microwave).
* Step 3
Drain the egg from the bowl with a slotted spoon and top it on the muffin. Poach the second egg as above and top it on the other half. Top the eggs with hollandaise sauce and black pepper.
