Pork Tenderloin with Mustard Cream Sauce

This recipe is inspired by something I found at recipetineats.com, but I adapted slightly so everything happens on the stovetop. 🐖🥩

pork loin

1/2 cup

cream

2 tsp

tarragon

Cooking instructions

* Step 1

Season the pork all over with salt and pepper.

In a skillet, heat oil on medium high heat, and sear the pork on all sides, about 5 minutes per side.

Reduce heat to medium low, cover, and cook the pork until an instant read thermometer reads 70°C, about 10 to 15 minutes, turning occasionally. Remove from heat and set aside to rest.

* Step 4

Using the same skillet, on medium heat, add cream and mustard, deglazing the pan to scrape the bits left over. Add salt, pepper, and tarragon and mix well. Pour sauce over pork and serve.
