Salted Egg Pork
It's not that clear where this salted egg craze first began, but I first heard about it some ten years ago with potato chips from Singapore, and many of the extant recipes for it that I've found seem to indicate an origin in Singaporean Chinese cuisine. While the craze sorta peaked a few years ago, dishes like this remain popular throughout Southeast Asia. 🇸🇬🐖🥚

Cooking instructions
* Step 1
Combine marinade ingredients in a large bowl. Mix the pork and let marinate for at least 30 minutes.
* Step 2
In a small pan, heat the oil until hot but not smoking. Fry the marinated pork until golden brown. Let drain on paper towels and set aside.
* Step 3
In a pan or wok melt the butter and fry the curry leaves and chilli on medium heat. Add the milk and bring to a boil. Lower heat to medium low and add salted egg yolks, crushing them and mixing them in. Add fried pork and mix well to coat. Serve immediately.
