Double Dipped Potatoes

Double Dipped Potatoes

Just make sure your mashed potatoes are extra firm. A light side or snack. I served mine with mayonnaise but whatever you like to eat potatoes with is fine.

Ingredient

2-1/2 cup

mashed potatoes

1-1/2 tablespoons

chopped parsley

To taste

kosher salt

1/2-2 cups

breadcrumbs

As needed

to fry in

Cooking instructions

* Step 1

Mix the mashed potatoes with salt, parsley, and egg form them into the shapes you want.

* Step 2

Beat the eggs and add to a dish.

* Step 3

Add flour to a dish and the breadcrumbs to another.

* Step 4

Dip and dredge the potato through each of the coatings then repeat a second time coating twice. Flour, eggs, then breadcrumbs, then repeat.

Now refrigerate for at least an hour.

Heat the oil.

* Step 7

Take a few out of the refrigerator and fry.

When done, you can tell is when it floats to the top let it cook 1-1/2 minutes more. Then move to a paper towel to absorb excessive amounts of oil.

Repeat till all are done.
