Pumpkin Egg Salad

This is made without mayo. I tried a different way of prepping the pumpkins (instead of the usual steaming or microwaving) and they turn out delicious.

Ingredient

Cooking instructions

* Step 1

Chop pumpkin into chunks (leave some of the skin on). Place in pot. Sprinkle with pink salt and let it sit for 10-15 mins. Some water will be drawn out. Retain the water and add in another 2-3 tbsps of water.

* Step 2

Cover pot and bring water to a boil. And then lower the heat to medium low and continue to cook for 10-15 mins till pumpkin is soft.

* Step 3

Add in eggs and mashed together. Enjoy!
