Holodnik cold soup

Belrussian cold beetroot soup

Ingredient

Cooking instructions

* Step 1

Boil beets until ready, peel and shred

* Step 2

Chop boiled eggs, add to beets

* Step 3

Chop cucumbers, add to mixture

* Step 4

Add chopped green onions and fresh dill (as much as desired)

* Step 5

Add 3 - 3.2 L of cooled boiled water

* Step 6

Mix in sour cream, then add salt, mustard and vinegar to desired taste

* Step 7

Let soup sit in a fridge for a couple hours. Enjoy
