Airfryer lamb chops
Honestly I had a rack of lamb in my freezer and just wanted to use it up. My hubby likes lamb and I can tolerate it. So I looked up this recipe on the web and tried it out. Pretty good. Make sure the lamb is a fairly thick cut not small like mine. I served it with rice and tatziki and some sliced cucumbers.
Cooking instructions
* Step 1
Pat dry the lamb rack. Then Remove silver skin from underside of ribs if needed. Cut into individual chops if this a rack of lamb by Peeling silver skin from back of lamb chop.
* Step 2
In a large bowl, combine olive oil, rosemary, garlic, salt, & pepper. I sometimes add a bit more than what is called for (more oil, more garlic and generous with the rosemary. It is especially nice with fresh Rosemary). Add the lamb and gently toss to coat in marinade. Cover and marinate for about 1 hour or up to overnight.
* Step 3
Preheat the Air Fryer at 380°F/195°C for 4 minutes. (I did not preheat) Spray air fryer basket/tray with oil spray (you could do olive oil like your marinade but I had some coconut oil) and place lamb chops in a single layer, making sure not to overlap the meat.
* Step 4
Air-fry at 380°F/195°C for 8 minutes, flip and air-fry for another 3-6 minutes, or to your preferred doneness. Serve warm.
Note *Cooked lamb chop
If your air fryer is preheated or if you are cooking multiple batches, you may need to reduce timing by a few minutes (unless preheating is called for in the recipe). But I have a Phillips Airfryer and cooked 2 batches and did not adjust the time).
