Nigerian Vegetable Salad
This vegetarian salad is perfect as a side dish or as a main meal. It is usually eaten with Nigerian Jollof or Fried rice.

* Step 1
In a bowl, pour the coleslaw, corn,peas and beans in layers
* Step 2
Slice the hard boiled eggs and cucumber 🥒. Garnish with eggs and cucumber
* Step 3
Whisk the mayonnaise, vinegar and sugar in a separate bowl to make dressing
* Step 4
Pour dressing over salad and refrigerate leftovers
