Kickin' Corn Casserole
I really like Paula Dean's corn casserole, but my kids said it was too bland. I took Paula's recipe and to it added creole seasoning, jalapeno, and red peppers. It pairs well with a can of ranch-styled beans for a filling lunch/dinner meal that is affordable and tastes great. #GoldenApron23 Week 4 Corn

Cooking instructions
* Step 1
Melt the butter and add the drained corn. Then add the creamed corn and Jiffy Mix and stir well. Then add sour cream, peppers, and seasoning and stir. Everything fits into a 4-cup Pyrex cup.
* Step 2
Pour into a well-greased casserole dish. If not using cheese bake at 350 for 45-50 minutes if not using cheese. If using cheese sprinkle on top and bake for an additional 5-7 minutes.
* Step 3
I made mine with cheese and paired with some beans. I broke the casserole open so you can see what it looks like.
