Ingredient

5 pound

Leg of lamb

Cup

yogurt

1 teaspoon

each

2 teaspoon

Oregano

1 teaspoon

black peppercorns

1/2 teaspoon

Cumin seed

1 teaspoon

coriander seed

1 tablespoon

salt

Cooking instructions

* Step 1

Over medium heat roast all spices for about 3 minutes then grind

* Step 2

In bowl add yogurt all spices on top add 1/4 olive oil and minced garlic and mix

Make few deep cuts in the meat start adding the mixture all over the meat special inside the cuts cover and refrigerate over night at least 12 hours

* Step 4

Get it out of the refrigerate let it rest for 20 minutes then Roast in oven 375 f for 2 hour and 45 minutes and broil for 10 minutes then turn the oven off and leave the meat inside the oven rest for 20 minutes enjoy over rice
