Vegan: Tortilla Casserole
Neighbors to my west are Hispanic and are outstanding chefs. I learn what I can from them. I also saw a taco casserole on another site which gave me the idea to put together a vegan tortilla casserole.
Ingredient

2 to 4 people

30 minutes
Cooking instructions
* Step 1
Brown Gardein plant based ground beef and onion in a pan with olive oil. About 10 to 12 minutes
* Step 2
Add 2/3 cup of water and Old El Paso Taco Seasoning. Stir until mixed in
* Step 3
Add sliced black olives, refried beans, salsa and La Victoria diced green chiles. Stir for 5 minutes over low heat.
* Step 4
Spray 8"x 8" casserole pan with Pam and cover bottom with crushed tortilla chips and a thin layer of Daiya vegan cheese
* Step 5
Layer tortilla mix on top of crushed tortilla chip and then add another level of crushed tortilla chips and tortilla mix on top of that.
* Step 6
Top with Daiya vegan cheese and bake for 30 minutes at 350 degrees
* Step 7
Let cool for 20 minutes. Delicious
