Chicken enchiladas or casserole

This is an easy chicken enchilada recipe that you can roll up or make as a casserole. My husband asks for this a LOT! Note: all of these amounts can be adjusted to your taste for spice.

Cooking instructions

* Step 1

Cut chicken into bite sized pieces. Chop onion. Sauté chicken, onion and garlic in large wide bottom pan on cooktop medium heat. When chicken is no longer pink, sprinkle taco seasoning on top. I add additional chili powder or red pepper flakes. Cook fully but don’t over cook.

* Step 2

In a bowl, combine sour cream and 1 cup of salsa together.

* Step 3

Spray/grease 9x13 inch baking dish. 2 layers: tortillas, beans, sauce, chicken and cheese. Repeat layers. Top with tortillas. Spread 1/2 cup salsa on top and sprinkle with cheese.

Bake at 350* F, uncovered for 30 min.

Optional: refried, black beans, or hummus Optional Add on top after baking Black olives Shredded lettuce

* Step 6

These are easily rolled up as well. Spray pan. Hold a tortilla and spread beans, Chicken, cheese and sauce. Roll up and continue until your pan is full. Top with additional sauce and cheese. Bake same.
