The BEST roasted potatoes
The key to these amazing roasted potatoes is to use red potatoes and slightly boil them before roasting them in the oven.
The hing or asafetida gives them a special kick and the crispiness makes them the all around perfect dish for everyone.

Cooking instructions
* Step 1
Assemble ingredients and preheat the oven to 400° F
* Step 2
Bring a pot of water and salt to boil and boil potatoes until half way done (test with a fork some some resistance) about 5-8 min approx
* Step 3
Strain potatoes and run them under cold water for a few minutes
* Step 4
Once they are cool enough to handle, cut potatoes in 4, leaving the skin on.
* Step 5
Mix potatoes, olive oil, salt, pepper and hing in a bowl and mix well
* Step 6
Assemble a 9 x 11 tray (or other) with parchment paper and lay out potatoes
* Step 7
Bake potatoes in the lowest rack for 25-35 minutes.
* Step 8
Move potatoes to the top rack for the last 10 minutes and test its firmness/ crispiness with a fork to ensure they are thoroughly cooked.
* Step 9
Remove from the oven, sprinkle parsley, serve and enjoy !
