Green Birria Tacos & Consome 🌮

The best Green Birria tacos with so much Flavor 🔥

Cooking instructions

* Step 1

Roast all of your Chiles and once fully roasted transfer them into a plastic bag to sweat for about 10 minutes, then peel the skin and take out the stem and seeds!

* Step 2

Boil Tomatillos and Chile de arbol and once boiled go ahead and add to your blender

* Step 3

Now add your tomatillos, Chile de arbol and your green Chiles all to the blender along with your garlic cloves, 1/2 cilantro, 2 bay leaves, vinegar, all your spices & 3 cups of water and blend! (This is your sauce that you will add to your pressure cooker)

* Step 4

Cut your roast into small cubes, season with salt

* Step 5

Add 1tsp of oil to your pressure cooker and put it in sauté so you can seer your meat, flip them over and cook each side of meat for about 1 minute until they are brown.

* Step 6

Add your green sauce to the pressure cooker withy your meat, add 2 bay leaves and put on pressure cook for 1 hour!

* Step 7

Grab a bowl and take the meat out of the pressure cooker and add some of the juice and start shredding your meat so you can now make the tacos :)

* Step 8

On a flat pan and drizzle oil and once your pan is nice and hot add your tortilla, flip it once and then add your cheese, meat, onion & cilantro and you can add some more Consome if needed, close your taco and depending on how crispy you want your tacos you can either let it sit longer or remove it
