Pesto Roasted Chicken

Making my batch of pesto let me with extra. I didn't freeze any so I wanted to use it up. I slathered this all over inside and out and the chicken was fabulous. It smelled ridiculously good cooking too.

Cooking instructions

* Step 1

Wash with cool water your chicken inside and out. Pat dry with paper towels.

* Step 2

Rub pesto all over the chicken, inside and out. You will need about 3/4 cup of pesto.

* Step 3

Roast chicken in a preheated 425°F fahrenheit oven for 30 minutes. Lower oven to 350°F. Roast chicken for 20 minutes per pound. Chicken should reach 165°F. Let rest 20 minutes outside of oven.

* Step 4

Carve and serve.
