Summer BBQ Salad

This is a great way to use leftovers. You can customize this salad to suit your taste and what you have on hand.

Cooking instructions

* Step 1

Add chicken, corn, beans, red pepper, onion and cilantro to a large bowl

In a separate bowl, mix ranch and bbq sauce

Add sauce to chopped chicken and vegetables, mix

* Step 4

Squeeze lime juice over, mix

* Step 5

Salt and pepper to taste

* Step 6

Optional ingredients: chopped avocado, tomato or jalapenos

* Step 7

Optional: Serve in avocado halves, hollowed out tomatoes or with tortilla chips
