Snakegourd coconut stir fry

Cooking instructions
* Step 1
Slice snake gourd into thin slices.
* Step 2
In a pan heat a tbspn of oil and add mustard seeds.once they start to splutter,add raw rice,dry red chilli and curry leaves.sauté for a minute.add sliced gourd,split green chillies 2-3 to pan mix well.add turmeric powder,salt and water.mix well.cover and cook till vegetables is well done on Low to medium heat.
* Step 3
Crush shallots,red Thai chilli a small piece of ginger (optional) in mortar and pestle.i use frozen coconut,hence i is grated to fine consistency.hence I hand mixed the crushed shallots,chilli and ginger well.if you are gratingthe coconut,then slightly crush in mortar and pestle,or use a grinder.do not make fine paste though.
* Step 4
Once gourd is cooked well,make space in the center and add coconut mix.cover with gourd and cook for 3-5 minutes.
* Step 5
Open,mix well and cook till dry.serve hot as side dish for rice
