One pot Okra Curry
Okra/ladies finger is one of my favourite vegetables.the dish is originally from Tamil Nadu,India.
It is an excellent dish to go with rice ,mainly because of the spicy tangy taste.

Cooking instructions
* Step 1
In a pan heat 2 tbsp oil,add mustard seeds and fenugreek seeds allow to splutter.add red chilli.sauté for few seconds.add shallots,green chilli,garlic and curry leaves.sauté till onions are translucent.
* Step 2
Add sliced okra.sauté till okra is tender.
* Step 3
Add tomatoes and cook till tomatoes are well done.add coriander powder,turmeric powder,salt and sauté well till it turns aromatic.add tamarind juice and add one cup of water.mix well.cover and cook on Low flame.
* Step 4
When we’ll cooked,remove lid and allow to boil till gravy reduces to 1/2.serve with rice.if you want the curry to be tangy adjust spices,and tamarind juice accordingly.since I used a clay pot,the gravy reduced further.do boil till the gravy is as required for you.
