Scandinavian salmon gravlax recipes are ancient. Salmon lox is an american east coast adaptation of gravlax. It can be made in city kitchens, made from a whole salmon, using the belly filets. Easy recipe.

Cooking instructions

* Step 1

Filet the sides of the salmon, leave skin on. Coat well with salt and sugar. Stack two halves on top of each other, skin out. Lay in glass baking dish, plank on top, rock on top, shrinkwrap. Put in fridge. Press seven days. Pour off the juices, rinse, dry. Cut salmon on the diagonal across the grain. Serve.
