Buttermilk Banana Bread (or Muffins)

The buttermilk gives this bread an excellent flavor. Recipe adapted from thewholesomedish.com

Cooking instructions

* Step 1

Preheat your identity to 350°F and grease your baking pan. Set it aside. In a large bowl, mash the bananas and whisk in the eggs. Then whisk in the buttermilk, oil, sugar and vanilla until its all combined. Add in the flour, baking powder, baking soda and salt and fold it all together until its just combined. If you'd like, fold in some chocolate chips or chopped nuts now.

* Step 2

Place the batter into your baking pan of choice. This makes a lot of batter (enough for a smaller loaf and 12 muffins), so you'll need to bake things in batches likely. Fill the pan only 3/4 way to the top.

* Step 3

For muffins: Bake for 22-26 minutes, until a toothpick in the center comes out clean. Let them cool in the pan for a few minutes then pop them out onto a cooling rack.

For bread: Bake for 37-45 minutes, until a toothpick inserted into the center of the loaf comes out either clean or with just a few moist crumbs. Allow it to cool in the pan for a few minutes, then pop out onto a cooling rack.
